A croissant split open around a chocolate-chip cookie centre, dusted with icing sugar

A Paris bakery idea that escaped onto TikTok

The crookie is exactly what it sounds like: a croissant stuffed with chocolate-chip cookie dough and baked again. It is excessive, messy and very good with coffee. Day-old croissants are ideal here; the second trip through the oven brings the outside back to life.

The Paris original and its TikTok spread were still being covered in May 2026.

Ingredients

  • day-old butter croissants4
  • unsalted butter, softened120 g
  • light brown sugar90 g
  • caster sugar50 g
  • egg1
  • vanilla extract1 tsp
  • plain flour180 g
  • bicarbonate of soda1/2 tsp
  • fine salt1/2 tsp
  • dark chocolate chips120 g

Method

  1. Heat the oven to 175°C and line a tray with baking paper.
  2. Beat the butter and both sugars until combined. Mix in the egg and vanilla, then fold in the flour, bicarbonate of soda, salt and chocolate chips.
  3. Split each croissant without cutting through the hinge. Add 45 g cookie dough inside and flatten it into an even layer.
  4. Close the croissant and press another 15 g dough thinly over the top.
  5. Bake for 12 to 15 minutes, until the top cookie is golden and the filling reaches 74°C. Rest for 10 minutes before eating.

Do not overfill it

Do not pack in a fist-sized lump of dough. A thin layer heats evenly. If your croissants are very dark to begin with, cover them loosely with foil for the last five minutes.

Make them ahead

Assemble the crookies up to a day ahead and refrigerate. Add two minutes to the baking time when they go into the oven cold.
