A tin of sardines goes a long way

Good sardines, hot toast and lemon would already make a decent lunch. The white-bean spread turns it into one that keeps you going until dinner. It is creamy without mayonnaise and mild enough to soften the fish without covering it up.

Sardine toast was one of the fastest-growing food searches in Pinterest's Summer 2026 Trend Report.

Ingredients

  • tin cannellini beans, drained1
  • lemon juice1 tbsp
  • extra-virgin olive oil1 tbsp
  • garlic clove1 small
  • thick sourdough slices2
  • tin sardines in olive oil, drained1
  • capers1 tbsp
  • red onion, thinly sliced1/4 small
  • flat-leaf parsley10 g
  • Black pepper, to taste

Method

  1. Blend the beans, lemon juice, olive oil, garlic and 2 tbsp water into a rough cream. Season lightly.
  2. Toast or grill the sourdough until crisp enough to support the topping.
  3. Spread the beans over the hot toast. Lay the sardines on top without breaking them up too much.
  4. Finish with capers, red onion, parsley and black pepper. Add more lemon if the fish is especially rich.

Which sardines to buy

Sardines packed in olive oil have enough richness for toast and usually hold together better than fish packed in water. Check the salt before seasoning the beans; capers add more.

About that leftover bean spread

The white-bean spread keeps for three days in the fridge. Spoon it under roasted vegetables, thin it into a salad dressing or use it in another sandwich.
