These oven-baked cottage cheese taco shells turn crisp at the edges and stay flexible enough to hold avocado, eggs, chives and hot sauce.

Three cottage cheese taco shells filled with scrambled egg, avocado and chives

This TikTok trick is actually useful

Cottage cheese and an egg white do not sound much like a taco shell. Twenty minutes in a hot oven changes that: the mixture browns into a thin, savoury round that bends without falling apart. Fill it while it is still warm and eat it straight away.

The version that sent us to the kitchen appeared in Canadian Grocer's 2026 TikTok trend report.

Ingredients

  • full-fat cottage cheese, drained200 g
  • egg white1
  • smoked paprika1/2 tsp
  • garlic powder1/4 tsp
  • avocado, sliced1 small
  • eggs2
  • butter1 tsp
  • chopped chives1 tbsp
  • Hot sauce, to serve
  • Salt and black pepper, to taste

Method

  1. Heat the oven to 200°C. Line a tray with baking paper and lightly oil it.
  2. Blend the cottage cheese, egg white, paprika, garlic powder and a pinch of salt until mostly smooth.
  3. Spread the mixture into two thin 15 cm circles. Bake for 20 to 24 minutes until deep golden at the edges and dry at the centre.
  4. Rest the shells for 3 minutes, then peel them carefully from the paper and drape them over a rolling pin while warm.
  5. Fry the eggs in butter. Fill each shell with avocado and an egg, then finish with chives, hot sauce and black pepper.

A dry shell starts with drained cheese

Drain watery cottage cheese in a sieve for ten minutes. Use baking paper rather than a silicone mat, and do not add the filling until you are ready to eat.

What else to put inside

Try smoked salmon and cucumber, black beans and salsa, or leftover roasted vegetables. Keep juicy sauces on top rather than underneath the filling.
